Production area
The interior zone of the D.O.P. Alicante, although it benefits from the proximity of the Mediterranean, turns out to be warm-continental in its essence, given its mountainous orography.
The vines selected for the production of this wine are over 30 years old and have a very low production, only 2-3 kg per vine.
Grape: Alicante Bouschet and Monastrell
Winemaking process
The harvest is done by hand, the stems are removed and it is delicately pressed. Cold maceration in steel tanks for 4 or 5 days at a constant temperature of 12-14ºC. Fermentation at a controlled temperature of 26ºC, using selected yeasts.
Tasting note
Deep cherry red in color with violet tones
Intense aroma: with red fruits that prevail over aromas of spices and a balsamic tone.
Long flavor on the palate, complex, soft and full-bodied.
It pairs perfectly with red meat, roasts, grills, sausages, cheeses, legumes and rice dishes.
