Description
Production area
D.O.P. Utiel – Requena. Made in the village of “Casas de Eufemia” with 65-year-old vines. Sloping clayey soil with good water drainage. The vineyards are located on the north face of the mountains, at 610m above sea level and at a distance of 60km from it, surrounded by pine forests, where they receive fresh winds from the interior, thus creating an interesting Mediterranean-continental climate combination for its cultivation. The vines are not attached to any support, trained individually under the technique known as Gobelet.
Grape: 100% Bobal
Winemaking process
The cultivation work is minimalist, trying not to intervene in the natural process, thus developing the maximum potential of the land and the grape variety. This organically grown grape is collected at dawn on the days of the first week of October, in small boxes to preserve its quality until pressing.
Cold maceration for 2 days and soft pressing after 15 days of fermentation with natural yeasts. Malolactic fermentation with its grounds in steel vats. Aged for a minimum of 5 months in French oak.
