This Iberian beef rib-eye comes from the lower loin of our Iberian bulls raised at El Capricho, a gourmet delicatessen livestock farm. It is a high-quality cut known for its juicy texture and intense flavor, attributes that make it one of the finest meats in Spain. The animals are raised freely on the Jiménez de Jamuz estate, a unique and natural environment that allows the bulls to develop freely, feeding naturally. The castrated males, over 4 years old, show a high degree of fat infiltration, which gives this meat exceptional tenderness and flavor, characteristic of El Capricho’s gourmet beef.
The rib-eye undergoes an individualized aging process that can exceed 120 days, a method that optimizes the conditions of the meat based on factors such as breed, age, and fat infiltration, reaching its peak of flavor and texture.
