Description
In Muxtamel, Alicante, we produce Gran Sereix cheese using raw milk from our own herd, following a traditional artisan process designed to express the full complexity and richness that time can bring. After production, the cheese undergoes a long maturation period of 12 months in our ageing rooms, where it slowly develops its final character.
This is a semi-hard to hard cheese with a natural edible rind formed by the native flora of the maturation process. Its aroma is clean and well balanced, reflecting a slow and carefully controlled ageing.
On the palate, it stands out for its intensity and persistence, with a distinctly fruity profile where ripe pineapple notes emerge, combined with toasted nuances reminiscent of chocolate and caramel. Its texture is firm yet buttery, with a pleasant fatty sensation and the presence of crystals that add depth and complexity.
The result is a rich and elegant cheese, combining toasted nuts, subtle spices, and a gently spicy finish that remains perfectly balanced.
Ingredients: Raw goat’s milk, animal rennet, lactic cultures and salt.
Serving suggestions: Remove from refrigeration a few minutes before serving to enhance aroma and texture. Ideal in flakes or paired with full-bodied wines.
Storage: Keep refrigerated between 6–8 °C. Once opened, wrap properly to prevent drying out.
