Discover our artisanal Manchego cheese made from raw milk of our own Manchega sheep, raised free-range and grazing year-round on natural pastures. With a 7-month curing period, each piece offers a firmer, more compact texture, natural rind, and a more intense, complex flavor profile, with deep cereal notes, lactic hints, and subtle earthy touches reflecting the richness of its environment.
This D.O.P. Manchego cheese is shaped in molds that imprint the classic cincho pattern on the rind, and during maturation each piece is turned and brushed to ensure optimal organoleptic qualities. It has a cylindrical shape with flat faces, ivory-colored paste with evenly distributed small eyes, and a pronounced lactic aroma, providing a unique experience for lovers of Spanish sheep cheese.
Ideal to enjoy on its own, in cheese boards, or paired with wines and gourmet products, our cheese is available in various formats, with a minimum weight of 2.5 kg. Each piece retains the traditional and artisanal character that defines authentic Manchego cheese, with a more intense flavor thanks to its extended maturation.
