Essensaciones imports “El Capricho” products to Switzerland:

The extra cecina is typically made with “tapa” which is a cut from the hindquarters of the ox. The piece is buried in salt and allowed to cure according to its size, being slowly dried afterwards and protected with the ox’s own lard.
