“De pata negra”: expression used in Spain to refer to something of excellent quality. It is a trait that differentiates the Iberian pig from other species, although not all Iberian pigs have black hooves.

Description

Essensaciones imports this Iberian pork ham to Switzerland, whose origin comes at least from these three subspecies:

– European wild boar,

– Mediterranean wild boar,

– Asian wild boar.

The characteristics of the pure breed are of a rustic animal, with colored coats, elongated snout, visor-like ears, and limbs adapted for grazing, making it an excellent walker.

Fed from piglet stage with compound feeds, and later during the montanera period, fattened in the dehesa. The montanera is the final phase of Iberian pig rearing and consists of letting the pig graze freely in the dehesa, where traditional fattening takes place among cork and holm oak forests, with its main food being acorns before slaughter.

It is a very delicate animal due to its high mortality rate and low tolerance to cold, as well as the fact that females have an average of 4 to 6 piglets per litter.

Black label: 100% Iberian Acorn-Fed Ham (hams coming from 100% Iberian pigs raised free-range in the dehesas and fed during the final fattening phase with natural pastures, aromatic herbs, and acorns).

Red label: Iberian Acorn-Fed Ham (hams coming from crossbred pigs, therefore not 100% Iberian, raised free-range in the dehesas and fed during the final fattening phase with natural pastures, aromatic herbs, and acorns).

Green label: Iberian Field-Fed Ham (hams coming from crossbred pigs, therefore not 100% Iberian, raised free-range in the dehesas and fed with natural pastures, aromatic herbs, and compound feed.)

White label: Iberian Feed-Fed Ham (hams coming from crossbred pigs, therefore not 100% Iberian, fed with compound feeds made from cereals and legumes and raised in barns or fattening pens, so their fat accumulates on the outer parts of the animal since they don’t walk around the dehesa).
